When I export Gerbers from AutoCad my origin is moving. It is in a different location in the gerber file versus the dwg. What is going on? How can I fix this?

This sounds like something that may be related to your drawings current UCS (user coordinate system). I'm not an expert, but I believe you can change the coordinate system while you're working in AutoCAD.
For example if I draw a rectangle with coordinates: 0,0 and 1,1 ; and then modify my coordinate system to make 5,5 the new origin. On the screen my box will now show coordinates of -5,-5 and -4,-4; even though the actual drawing database still stores the box coordinates 0,0 and 1,1.
While performing the Gerber conversion, EasyGerb queries drawing database for the "true" coordinates
Also, if you're in PaperSpace using EasyGerb the coordinates will be different from what's displayed on the screen.
