When I convert DXF to Gerber, I get multiple Gerber files. How can I merge all to one single Gerber file?

Typically by default ACE will create a separate Gerber file for each DXF Layer you have selected to convert.
However after import, the ACE Viewer also allows you to perform any editing. There are several different methods to merge all files to one, however in the example tutorial below (no sound) I just used the command Properties... (ACE viewer menu: Edit | Properties...), selected all objects, and picked a single layer for all selected objects. Then deleted the other layers, and finished the conversion.
