Can I create a Fabrication drawing from my Gerbers that will contain board information like thickness, layer stackup, and drill locations?

Yes, you make use the "Create FAB Drawing..." to tell the PCB manufacturer about the board thickness and layer stackup. Menu: Tools | Create Fab Drawing...

Note: A boarder layer is required. If you do not have a boarder layer you will need to create one.

Note: Once or more drill layers is required.
